Healthy Appetizers - Cucumber/Gravad Lax Roll and Shrimp Salad

FOR THE CUCUMBER/GRAVAD LAX ROLL:
1 small English Cucumber
1 pkg. 7oz. IKEA Gravad Lax*
2 tbsp. IKEA Gravad Lax Sås (Mustard Sauce)*
Fresh Dill
FOR THE SHRIMP SALAD:
3 sheets of Phyllo Pastry
4-5 oz. Shrimp, cooked and peeled*
2 tbsp. IKEA Horseradish Sauce*
1 tsp. Ketchup
2 tbsp. julienne of Leek
1 jar 2.8 oz. Red Lumpfish Kaviar*
1 jar 2.8 oz. Black Lumpfish Kaviar*
4 Lemon slices, halved
4 small wedges of Tomato
Fresh Dill or Parsley

Directions

FOR THE CUCUMBER/GRAVAD LAX ROLL:
Slice the cucumber lengthwise with a potato peeler. Cut strips of gravad lax to fit the width of the cucumber slices. Place the gravad lax on cucumber slices and roll together. Garnish with dill and serve with mustard sauce.
FOR THE SHRIMP SALAD:
Layer 3 sheets of phyllo pastry brushed with oil and cut into small equal squares. Press dough into muffin pans and bake in 350˚ preheated oven for about 10 minutes or until golden(The phyllo bowls can be baked the day before). Mix the horseradish sauce with the ketchup and gently fold in the shrimp and leek. Spoon the shrimp mixture into the Phyllo bowls. Place 1 teaspoon each of Red Lumpfish, and Black Lumpfish on top and garnish with the lemon slices, tomato and dill or parsley.
