Put the Kids to Work On This Classic Dessert

Children love the excitement of the holidays — and the sweet treats that come with it. They also love to help out in the kitchen. So put them to work on cooking up something fun. Lingonberries, with their deep red color and slightly tart flavor, are a treasured part of Swedish cuisine. And lingonberry parfait is a classic dessert that combines great taste with a festive holiday color. Our recipe is simple enough for kids to help prepare, and the result is elegant enough to make parent and child proud. And it's an opportunity to teach your child a bit about what kids eat in Sweden.

LINGONBERRY PARFAIT

Serves 4-6

Ingredients:

  • 2 EGGS
  • 1/4 CUP SUGAR
  • 2/3 CUP LINGONBERRY JAM, "LINGONSYLT"*
  • 1-1/4 CUPS WHIPPING CREAM
  • WHIPPING CREAM AND LINGONBERRY JAM FOR GARNISH

Procedure:

Beat the eggs and sugar till fluffy. Carefully fold in the lingonberry jam. Whisk the cream quite hard and fold not quite all of it into the egg mixture. Freeze the mixture in individual glasses or a dish. Leave to stand in the freezer for at least 4 hours. Remove the parfait from the freezer 5 or 10 minutes before serving. Garnish with a blob of cream topped with lingonberry jam.
